I’m debunking a long-held belief that washing the rice is required for fluffy rice. It isn’t! I’ve made a lot of rice in my time, so I can attest to this.
Here’s what I’ve learned thus far:

No rinsing required – if you use 1 1/4 cup of water for 1 cup of Vietnam ST perfume rice, your rice will be fluffy even if you don’t rinse it.
To account for the excess water that remains in the rice after rinsing, reduce the water by 2 tablespoons (ie 1 1/4 cups water minus 2 tablespoons).
You must lower the water by 3 tablespoons if you rinse AND soak for 1 hour (eg 1 1/4 cups minus 3 teaspoons).

  2. Add water and rice to a pot (using 1 ¼ cup water for 1 cup of rice). Add salt to taste.
  3. Bring the water to a boil.
  4. Lower the heat to low and cover the pot with a lid. Let the rice simmer until all the water is absorbed, or about 10 to 15 minutes. When checking for doneness, be sure to check the rice at the bottom of the pot, using a wooden spoon to make a well.
  5. Remove the pot from heat and allow the rice to rest for 10 minutes. Fluff with a fork and serve.

How to Cook Vietnam ST perfume Rice in the Rice Cooker

  1. Once again, start by rinsing the rice to remove excess starch. Rinse in a fine mesh strainer until the water runs clear.
  2. Add the rice and water to your rice cooker, using about 1 ½ cups of water for every 1 cup of rice (refer to manufacturer instructions). Add salt to taste.

  2. Add 1 cup of water for every 1 cup of rice to the inner pot. Add salt to taste.
  3. Close the lid and lock. Switch the steam valve to the sealing position.
  4. Using the “manual” button, cook on high pressure for 3 to 5 minutes.
  5. Once the timer is up, allow the pressure to naturally release.
  6. Once the float valve has dropped (meaning all the pressure has been released), remove the lid and fluff the rice with a fork or paddle.
